Buddha Bowl
Ingredients
- ½ uncooked Grains – Rice, Buckwheat, Barley or couscous
- 3 cups Vegetables – Spinach, Cabbage, Cauliflower, Mushrooms, Bell pepper, Carrots, Tomatoes, Cucumber, Zucchini, Onion, Sprouts
- 1 cup cooked Legumes – Kidney beans, Chickpeas, Brown lentils, Peas
- 1 Sweet potato
- 1tbsp Lemon juice
- 1 small Garlic clove
- 2 tbsp. Tahini
- ½ Pepper and Salt
Instructions
- Choose one grain and cook it
- Choose any three of vegetables mentioned above and sauté them
- Prep the legumes
- Add everything together in one bowl. Enjoy!
