Buddha Bowl

 

Ingredients

  • ½ uncooked Grains – Rice, Buckwheat, Barley or couscous
  • 3 cups Vegetables – Spinach, Cabbage, Cauliflower, Mushrooms, Bell pepper, Carrots, Tomatoes, Cucumber, Zucchini, Onion, Sprouts
  • 1 cup cooked Legumes – Kidney beans, Chickpeas, Brown lentils, Peas
  • 1 Sweet potato
  • 1tbsp Lemon juice
  • 1 small Garlic clove
  • 2 tbsp. Tahini
  • ½ Pepper and Salt

 

Instructions

  • Choose one grain and cook it
  • Choose any three of vegetables mentioned above and sauté them
  • Prep the legumes
  • Add everything together in one bowl. Enjoy!
