Cauliflower Fried Rice with Tofu

Ingredients: 1 head cauliflower washed, 1 tablespoon olive oil, 3 cloves garlic, minced, 1 small onion chopped, 1/2 cup canned or frozen corn, 1/2 cup frozen peas, 1/2 cup shredded carrots, 1 cup bean sprouts, 1 teaspoon dried ground ginger, 1 teaspoon garlic powder, 1/2 teaspoon pepper, 1 tablespoon soy sauce.

Recipe: Using a box grater or food processor, grate the cauliflower

so that it resembles rice.

Heat a wok or large skillet over medium-high heat and add olive oil.

Once hot, stir in garlic and onion and cook for one minute.

Add corn, peas, carrots, and bean sprouts and cook until tender, about

5 minutes. Stir in cauliflower, along with seasonings and soy sauce.
