Mango Fruit Rollups

Here’s What You’ll Need:
• 3 large ripe mangoes, peeled
• ½ cup water
• 1 tsp lemon juice

Let’s Get To Cooking:
1. Preheat your oven to 200°F
2. Line a baking sheet with a nonstick baking mat
3. Put mangoes with water and lemon juice in a blender until smooth
4. Pour into a medium saucepan and bring to a simmer over medium heat
5. Reduce heat to maintain a simmer and cook, partially covered, about 20 minutes
6. Pour the puree onto the prepared baking sheet, using a rubber spatula, spread very evenly into a thin rectangle, no thicker than ⅛ inch
7. Bake until dry to the touch, 4 to 6 hours. Let cool completely and transfer to a piece of parchment paper (or wax paper) about the same size
8. Leaving the parchment underneath, tightly roll the fruit into a long cylinder
9. Using a sharp knife or scissors, cut into 2-inch wide strips
Tip: Store them in an airtight container for up to 1 week.
