Ingredients:
Black beans 1-cups cooked
Garbanzo beans 1-cups cooked
Red kidney beans 1-cups cooked
1 medium red onion, chopped fine
1 cup corn
1 tomato
1 green pepper, chopped
1 bunch green onions, chopped
2 stalks celery, finely chopped
Carrots, grated or finely chopped
1/4 cup olive oil
2-4 cloves garlic, minced
Juice from half a lime
1/4 tsp. salt
Directions:
Heat oil in a pan. Add onions, pepper, tomato, carrots, garlic cloves and stir fry for a few mins. Add the mixed beans to the veggies. Add salt to taste and squeeze lemon juice over it.
