Protein Poha

Poha is a popular maharashtrian breakfast recipe made from red or white poha

A perfectly well balanced vegan meal with a low GL.??

 

Ingredients:
2 cups poha (flattend rice)
1 cup mixed sprouts (boiled)
½ cup peanuts
½  tsp mustard seeds
½  cup chopped onions
2  chopped green chillies
¼ tsp turmeric
3 tsp lemon juice
1 tbsp olive oil
Salt to taste

Directions:
1. Start with Placing the poha on a sieve and wash lightly. Drain and leave aside for 10 minutes.

2 Add the mustard seeds in a hot pan. On crackling, add peanuts and fry for 2 mins then add the onion and green  chillies and sauté till the onion turns brown.
3.Add sprouts, turmeric powder and salt then cook for 4 minutes.
4. Add the poha and lemon juice and mix well.
5. Serve hot and garnish with the chopped coriander.
