Vegetable Chilli

This recipe by Parafit is loaded with fiber, vitamins, and antioxidants!This delicious Easy Vegetable Chili Recipe is our family’s go-to, one pot dinner. It’s full of healthy vegetables and is so easy to make. It’s perfect for a Meatless Monday vegan meal.

 

INGREDIENTS

2 tablespoons olive oil

1 large zucchini

2 large carrots

1 small onion

1 green bell pepper

1 jalapeno pepper

1 cup low sodium

1 cup black beans

1 cup white beans 

2 tablespoons chili powder

1 tablespoon garlic powder

1 teaspoon cayenne pepper

1 teaspoon oregano

2 teaspoons pepper

 

METHOD

Start heating a large saucepan over medium heat and add olive oil.

Add chopped vegetables and cook for 8 minutes.

Add beans and seasonings cook on a low flame for 1 hour.

Serve immediately.
