This recipe of lotus stem salad by parafit is loaded with fiber, vitamins, and antioxidants! Lotus or Kamal kakdi, is (most of the times wrongly called as lotus root) very popular vegetable in India and several other Asian countries including China and Japan. Nelumbo nucifera is the scientific name of the lotus stem.
INGREDIENTS
1 cup parboiled lotus stem
1 cup parboiled carrot
1 tbsp chopped celery
2 tsp olive oil
1 tsp cumin seeds
2 curry leaves
salt and pepper to taste
2 tsp lemon juice
3 tsp powdered sugar
1 tsp soy sauce
METHOD
Combine all the vegetables and dressing in a bowl and mix well.
Heat the oil in a small pan and add the cumin seeds.
When the seeds crackle, add the curry leaves and pour this tempering in a bowl and toss gently.
Refrigerate it for an hour and serve fresh.
