ROASTED RED PEPPER HUMMUS RECIPE

Ingredients

  • 1 cup dried chickpeas, soaked in filtered water overnight
  • 1/2 cup jarred roasted red peppers (no liquid)
  • 2 tablespoons tahini
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon each, salt and pepper
  • 1 teaspoon oregano

Directions

Strain and rinse soaked chickpeas and add to a blender or food processor. Add all remaining ingredients and process until smooth, about 30 seconds. Transfer to a serving bowl, drizzle with additional olive oil if desired and enjoy with crackers or fresh vegetables.
